a medium onion, diced
5 sticks of celery, diced
1 medium carrot, diced
a pound of lean (organic) ground beef
2 cans of kidney beans
2 cans of tomato, chopped
1 - 6oz can of tomato paste
1 heaping tablespoon of chili powder
1 cup of water (more or less to taste)
2 packets of Chili seasoning mix - brand does not matter


How Do I Make Chili Night?

Here is how you make Chili Night:

Dice the onion, celery and carrots and sauteed in olive oil.Once the veggies are on their way to soft add the ground beef, and brown.Salt and pepper while cooking the veggies and beef.Once the meat is browned add:the 2 cans of kidney beans, 2 cans of chopped tomato, a full can of tomato paste, a heaping tablespoon of chili powder, a cup of water (more or less to taste) and 2 packets of a Chili seasoning mix. Cook over a medium heat allowing the chili to simmer awhile to bring all the flavors to light. Some people like to serve this with ketchup (yikes), prefer a dollop of light sour cream on top.Additionally adding garlic and/or a pinch of sugar can boost flavor.
