At this point it's done, but some like it thick, not watery. One way to do this is to let this pot cool overnight and let all the ingredients and liquid meld. Even when you reheat it the next day it will be thicker. For those who don't want to wait, you can make and add a roux. Roux is just flour that's been lightly browned with oil or butter. Another way to thicken it fast is to add some bread crumbs. Both roux and bread crumbs go a long way in thickening your stock, so less is more. But they both will require you to simmer the pot a little longer when you add them; to properly infuse them.
