Here is how you make Line's Chili:

heat up the oil in a large pot, fry the spices and the scotch bonnet to get the smokey flavor out of them, add the onions and garlic. When the onions are light brown add the beef and brown the beef through. Add the peppers and mushrooms and warm up the veggies. Add the beans and the tomato sauce and simmer for 2-4 hours depending on the amount of time you have available. The longer the better. Be sure to stir. (You can also do it in a slow cooker, personally I use my french oven and put it in the oven when it has come to a good consistent simmer).
