How Do I Make Ultimate Chili Mac?

Here is how you make Ultimate Chili Mac:

Cook macaroni according to package directions. Leave out 3/4 cup of water to add later. Set aside. In the olive oil saute the chopped onion and red pepper until softened. Stir in garlic, chili powder and cumin and cook until fragrant. Stir in buffalo and cook until no pink is showing. Stir in tomato puree and stewed tomatoes with juice, sugar and reserved cooking water. Simmer for 20 minutes.Season with salt and pepper, stir in macaroni and 1 cup of cheese. Mix until clumps are gone. Transfer to 13 x 9 inch baking dish. Top with remaining cheese. Bake until bubbling around edges and cheese is spotty brown, about 15 minutes.
