2 lb pork shoulder cut into 1 inch cubes
2 T olive oil
1 red onion quartered
1 jalapeno cut in half lengthwise & partially ribbed and seeded
14 tomatillos cut in half
3 cloves garlic, peeled
1 bunch cilantro, chopped
1T lime juice
2 cups chicken broth
1 T cumin
1 t paprika
salt and pepper


How Do I Make Chili Verde?

Here is how you make Chili Verde:

Cut pork shoulder into 1 inch cubes and brown in olive oil in oven proof dutch oven. Place tomatillos, onions, garlic and jalapeno cut side down on jelly roll pan and broil until skins are browned. Place roasted veggies in blender with cilantro and lime juice and blend until smooth. Remove pork from dutch oven, add some chopped onion and spices and cook for 4 minutes, add broth. Return meat to pan along with tomatillo sauce, bring to a boil. Cover and cook for 2 hours in a 300 degree oven.Serve over rice or with tortillas (not included in nutritional info)Serving Size:?8 1-cup servings
