1 tablespoon vegetable oil
1/2 cup chopped onion
2 pounds ground beef (I recommend using the extra lean beef as there will be less grease in the chili)
1/3 cup chili powder
1.5 teaspoon ground cinnamon
1 teaspoon ground cumin
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 bay leaf (make sure you use a real bay leaf and not bay leaf powder)
1/2 (1 ounce) square unsweetened chocolate (If you like you can double the chocolate, which is what I did with my second batch)
2 (32 oz. containers) beef broth
1 (15 ounce) can tomato sauce
2 tablespoons cider vinegar
1/4 teaspoon ground cayenne or paprika pepper


How Do I Make Lindsay's Chili?

Here is how you make Lindsay's Chili:

1. Heat oil in a large saucepan over medium heat. Add onion and cook, stirring frequently, until tender, about 6 minutes.2. Add 32 oz. of beef broth and beef.3. Bring to a boil and continue to cook on a low boil for roughly 3 hours. You may need to add broth as the beef cooks, add the broth a cup at a time, usually only needs an additional 2 cups. I add one cup per hour.3. Add chili powder, cinnamon, cumin, allspice, cloves, bay leaf, chocolate, beef broth, tomato sauce, cider vinegar, and red pepper. Stir to mix well. Bring to a boil. Reduce heat to low; cover and simmer 2-3 hours, stirring occasionally.4. It is the best if you now refrigerate overnight.5. Remove the bay leaf.
