Saute onions and bell pepper. Add beef back to pot and add cans of tomatoes and beans.Add chili powder to water and stir and then add to pot. Salt and Pepper to taste.Simmer until you're ready to serve, but for at least 15 minutes.Now, I'm from Texas and our chili is more souplike than let's say a Florida chili... so it's good to know that everything can be adjusted... the thickness can be adjusted by the amount of water added and the smokiness of it can be adjusted by the amount of chili powder. I also know that this is a large "batch" - but I make it this way so that it will last a couple of days. (it's always better the day after.)Okay, I know this is a recipe and not a life story but ~ I think it is wonderful served over rice (brown or white), pasta and my all time favorite Fritos.
