Here is how you make West Texas Chili, quick version:

Saute the beef in olive oil for a few minutes, on medium to medium high heat,to coat not brown. Add in the garlic, more or less to taste. Mix together the flour (if you like a thinner chili, two tbsp, for a thick dish, four tbsp), Chili powder and cumin; lower heat to medium, or medium-low, and toss in bay leaf for taste. (Can add a sprinkle of oregano.) Add 1 1/2 cans of beef broth, bring to a boil and add salt and pepper to taste.
