Begin soaking them the day before cooking. Simmer the beans until tender in fresh water while assembling the rest of the chili.Brown the meats with the onion. Work in batches to make it manageable. Drain well. Toss into a very large stock pot with everything else. Drain and add the tender beans. Add 6 cups of water to make it rather soupy.Simmer for three or more hours to allow the flavors to blend, stirring to prevent the bottom from burning. Add water as needed. This becomes much milder the next day.
