Spray crockpot or skillet with cooking spray and cook onion and garlic for a few minutes. Add pork and cook until it all starts getting juicy. Remove to crockpot and add spices and other ingredients except beans, and mix thoroughly, adding enough water to your desired consistency. Cook on low for 8 hours.
