Heat 2 teaspoons of oil in a saucepan that is big enough for all the ingredients. Gently fry until translucent, then chop the cooked sausage into bite-sized chunks and stir into the onions. Add black pepper to taste. When mixed add the tin of beans and tin of tomato. Stir continuously while cooking through, then add the teaspoon of oregano (more or less to taste), and the same of basil pesto. Mixed herbs also work well. Add up to a tablespoon of tomato puree to thicken, and a dash of lemon juice. Now either cook on the hob, on a low heat stirring regularly or, if you have an all metal pan, transfer into a low oven. Takes about 20 minutes for the flavours to cook in.Serve with crusty buttered bread or wholegrain rice. Keeps well to warm up. You can also chop up some ham or cooked bacon into this as the same time as the sausage.Number of Servings: 1Recipe submitted by SparkPeople user PEZTER.What's The Nutritional Info For Cowboy Hotpot? The nutritional information for Cowboy Hotpot is:
