How Do I Make Red Lamb Curry?

Here is how you make Red Lamb Curry:

Trim lamb meat and cut into 1" cubes. Heat oil in a large skillet or wok over high heat. Add the onion and garlic and stir-fry for 2-3 minutes to soften. Add the meat and stir-fry the mixture quickly until lightly browned.Stir in the curry paste and cook for a few seconds. Then add the coconut milk and sugar and bring to a boil. Reduce the heat and simmer for 15 minutes, stirring occasionally.Stir in the bell pepper, stock, fish sauce, and lime juice, then cover and simmer an additional 15 minutes or until the meat is tender.Add the water chestnuts, cilantro and basil and season to taste with salt & pepper if desired.
