Oh, the things you learn in college. Such as: you can cook egg beaters in a microwave. You don't even have to stir, just pour and nuke. It comes out as a scrambled egg patty in the shape of whatever container you microwaved in.Pour 1/3 c. egg beaters into a microwave-safe container (like gladware). Pick a container that's about the same diameter as your english muffin and has room for the eggs to puff up. Microwave the for 90 seconds.While it's microwaving, spread your wedge of laughing cow cheese onto the English muffin. Add the slice of canadian bacon.When the eggs are done, run a spoon around the edge to plop it out onto your muffin. Microwave for another 20-30 seconds to heat up the muffin. Enjoy!I often prep this (in about 2 minutes) at home, and actually make it at work.
