Preheat oven to 375 degrees F.Put finely chopped onion and Egg Beaters in bowl to mix. In cupcake pan (not mini), spray the cups with Pam. Sprinkle the cups with sausage (you will have to watch how much because you are making 16 cups). I use a ~tablespoon of sausage crumbles for each.Fill each cup 2/3 full with egg/onion mixture. Place in oven and bake 12-16 minutes until they are puffed up. Remove from oven and sprinkle with cheese. Let sit for 5 minutes and remove egg cups from pan.
