Rinse and tear up kale. Simmer in a little water on the stove until tender - 5 to 10 minutes. Meanwhile in another bowl, beat 3 eggs and set aside. Drain the kale and save the cooking water.Heat a non-stick skillet over medium heat. Add 1 teaspoon coconut oil and the little pieces of ham. Add the drained kale. If there isn't much cooking water left you can add that too, and cook and stir until the water evaporates. (Or you can just discard the cooking water.) Pour in the reserved beaten eggs and cook and stir until the eggs are set.
