Saute Onion in a pan over med heat with a bit of non-stick spray. toss in diced pork, stir and remove from heat. Put eggs and egg beaters into a large bowl, add milk, salt and pepper. Stir to combine. Preheat oven to 350 degrees. Spray a 12 cup muffin tin with nonstick spray. Divide onion & pork among cups, pour in egg mixture to cover. Bake for 10-15 minutes or until eggs look just barely set.
