1 T. whole allspice

2 tsp. cumin seeds
1 T. whole black peppercorns
2 T. ground dried chipotle peppers
3-4 drops liquid smoke
1/4 tsp. salt
3 cloves garlic, smashed
juice of 1 orange
juice of 1/2 lemon
juice of 1/2 grapefruit
3-lb. elk tip roast

Here is how you make Elk Pibil:

Grind annatto, allspice, cloves, cumin, peppercorns, and chipotle peppers till well mixed and finely ground; stir in salt.Place citrus juice and garlic in bottom of 3-qt. slow cooker. Cut elk roast into two large bricks (so you can stand them up and fit them in the slow cooker, and so you have more surface area to smear with spices!). Thoroughly coat meat in spice mixture and stand up in the bottom of slow cooker. Ladle some of the citrus juice over the top (gently! don't wash off all those spices!). Cook on low heat for 10 hours. Remove meat from crock pot and shred with two forks (so it resembles pulled BBQ meat). Strain broth (or just fish out garlic chunks) and return meat and broth to crock pot and toss to coat evenly.
