How Many Servings Does Gringo Enchiladas Recipe Make?Gringo Enchiladas makes 8 servings. What Are The Ingredients For Gringo Enchiladas Recipe?The ingredients for Gringo Enchiladas are: 1 lb. Ground beef, lean8 tortilla Corn Tortillas, (Do not use flour tortillas) *3 cups Cheese, Mexican Style Taco Cheese, 3 cups Onions, raw, chopped, divided in 2 (chop additional to be used for garnish if desired 1 large can Tomato Sauce, 1 tsp Chili powder, 2 tsp Ground Cumin, 1 can Water, tap, (fill tomato sauce can with water) How Do I Make Gringo Enchiladas?Here is how you make Gringo Enchiladas: In non stick pan fry ground beef till mostly done (very little pink left) add 1 cup onions, 1 tsp Cumin, 1 tsp Chili Powder. Stir together, Cover and allow to simmer till no pink in the meat. Remove from heat to cool slightly. Divide into 8 portions. In deep non stick pan add remaining onions and cook till clear. (don't brown). Add tomato sauce and water. Stir well. Add rmaining Cumin and Chili Powder. Simmer till well heated ans slightly reduced. Keep hot. ROLLED ENCHILADAS - Place in Broiler proof dish or plate Take 1 corn tortilla and place in sauce, quickly cover with sauce and remove to container. Place 1 portion of ground meat on to tortilla (in pencil like manner) Add small amount of Cheese & some onion and roll tortilla into tube. Continue in this manner until all tortillas are competed. IF USING PLATE - place only 1 or 2 enchiladas on each plate. Sprinkle Cheese on top and a spoonful of sauce (garish with onions) and place under broiler till cheese has melted.IF USING A PAN - Pre-heat oven to 375. Place enchiladas side by side till pan is full. Sprinkle with cheese and garnish with onions. Pour remaining sauce over enchiladas. Place in oven till cheese melts and sauce is absorbed.AS A CASEROLE - Spray pan with Pam (or other brand) Start with a little sauce in bottom of pan. tear or cut up tortillas and place 1 layer on sauce. Next place a layer of meat, onions and cheese. Then spoon some auce over and start layer again with tortillas. Continue till you fill pan or use all the meat. Finish with onions and cheese on top.
