What Are The Ingredients For Mom's Enchiladas Recipe?The ingredients for Mom's Enchiladas are: Ingredients: *16 La Tortilla Factory - Low Carb Tortilla, large *old el paso enchilada sauce 2 19 oz cans *HEB Ground Beef Extra Lean 2 lbs 96 percent fat free Onions, raw, 4 cups, chopped Chili powder, 1 tbsp *Celtic Sea Salt (Light Grey), Coarse Grain (The Grain & Salt Society), .5 tsp or to taste *Black Pepper (Ground), 0.25 tsp HEB Reduced Fat Cheddar, 1 cup *KRAFT natural cheese fat free shredded fat free cheddar cheese, 1.5 cups *Olives-Sliced Black Olives 1 cup How Do I Make Mom's Enchiladas?Here is how you make Mom's Enchiladas: Cover onions with water. Cook for 15 min until tender. Drain water. Brown ground beef, drain. Mix onions, beef, chili powder, olives and 1 can of sauce, seasoning to taste with salt and pepper. Add 3/4 of the cheese. Mix well. Dip tortillas in remaining sauce on a plate. Fill with 1/16th of the filling. Roll and place seam down in 13 x 9 greased pan. Continue to fill, roll and place in pan. If it gets too crowded, go to a second pan. Top with remaining sauce and cheese. Bake at 350 for 30 minutes or so or until bubbly and heated through. If needed add additional sauce before cooking to make sure enchiladas are not dry.
