Grind your lean cut of beef in a Cuisenart or other meat grinding appliances. Place in a large bowl. Grind your chicken breast finely and add to the beef. Finally add the hot sausage, 3 cups of bread crumbs, finely minced onion, garlic and celery. Mix thoroughly and then add the 3 eggs, salt (aprox. 1 tsp.) and Italian seasoning (about a tablespoon). Mix with your hands until well blended. Roll into 1 1/4 inch balls and place on an oiled cookie sheet (one with sides). Bake in a 350 degree oven for about 20 minutes.
