In a tbs of coconut oil saute the onion, garlic and pepper. Add the ground pork and spice it to taste. When done, add the spinach and remove from heat to cool. Grease a giant muffin mold pan (I use cooking oil spray) and preheat oven to 350 F. The 'giant' size equals 1.5 servings of the regular muffin mold. Fill in the molds a little bit over 2/3. Use a spoon or a fork to stir inside the muffin mix to hlp the egg spread evenly. Bake for 20-30 min (depending on oven) or until golden brown. These are very very filling. You can manipulate the recipe and add bacon, mushrooms or other vegetables of choice. They are ridiculously low in carb and packed with good fat. Serving Size:?6 giant muffins
