Extract the juice from the lemon.Pour juice over the lamb and marinate for at least an hour, or overnight if possible (this will help tenderise the lamb).Line a baking tin with foil and then greaseproof paper, put the marinated lamb along with the juices, in the middle, add the garlic, lemon zest and season. Carefully fold the paper and foil over to form a 'tent'. Bake in the centre of the oven, 150C for approx 1 hour, until lamb is soft and tender.
