Beef Stew Meat (Raw -- but you can substitute leftover beef pot roast and make this go even quicker.)2 tbsp Olive Oil 1/4 C Whole Wheat Flour 1 Med Onion cut into chunks 3 Cloves Garlic, crushed 4 C Beef Broth - low sodium 1/4 C Red Wine (Merlot or Cabernet - not cooking wine)* 2 C Water 1 lb Baby Carrots 2 Stalks Celery, cut into chunks 2 Red Potatoes, cut into chunks with skin (don't peel) How Do I Make Diana's Beef Soup?Here is how you make Diana's Beef Soup: Makes 8 1&1/2-C ServingsHeat oil in a large stock pot over low heat. Add beef and flour, and let it brown a little, stirring occasionally. Add onion and garlic and cook until onions are clear. Add carrots and celery, broth, wine and water. Let it simmer about 30 minutes, and then add the potatoes. Add seasonings such as salt, black pepper, bay leaves, and a little dried basil and red pepper flakes, per taste.Let it simmer for another 45 minutes to an hour, until beef is tender and potatoes and carrots are done. *The simmering process will evaporate the alcohol content of the wine, but leave the wonderful earthy flavor. It's not a necessity to the recipe, however, so don't be afraid to omit it for dietary or religious purposes. Serve in big bowls with whole wheat rolls or corn bread muffins.Tasty and filling.
