Heat skillet coated with cooking spray over medium heat. Add onions and saute until translucent (I like to add just a pinch of salt at this time). Add ham and continue to cook until warm and slightly brown at the edges. Pour egg whites over met and vegetables and sprinkle with herbs; cook until set. Place cheese on top of omelette. Flatten the wedge, but don't worry about spreading it evenly--it will do that as it melts.
