Here is how you make Tetch's Ham and Parmesan 'Frittata':

Prehat Oven to 350 Degrees.*Dice onions prior to beginning. Your preference as to how many. I use about 3 tbsp of Vidalia Onions for my recipe. *In a large skillet, brown the ham steaks or heat to your liking. While browning the ham, start the egg mixture.In a mixing bowl, crack 3 eggs (calories in this recipe are for extra large eggs), wisk until smooth. (I add in about a tbsp of water as well) Add 1/2 cup of egg whites, wisk together. Add fresh cracked pepper and 2 tbsp of parmesan cheese. Set aside. *Dice ham into consistent bite size pieces. Slice tomatoes in half.*In a separate skillet, add olive oil heat on medium low heat, saut? onions until translucent (just a few minutes), add in garlic, saut? . Add in egg mixture, top with ham and tomatoes. Cover. Cook on Medium low heat until set (no runny egg or very little.) Cover with remaining parmesan cheese. Place in Oven. (I turn my broiler on low at this point) Allow to cook for 3 minutes. Be careful, the pan will be hot when removing from the oven. I let the Frittata set for about 5 minutes and slice with a plastic spatula like pizza slices. Makes 6 slices Serving Size: 1 Slice
