Add any spices to the ground beef as you cook. (I added creole seasoning, chili powder, and onion flakes). Drain meat once it is cooked. (I rinsed it to get additional grease off it). Add some of the sauce to the meat.Pour about 1/4 cup in the bottom of a casserole dish to keep from sticking. Dip each tortilla lightly into the sauce and then spoon about 3 tablespoons of the meat onto each tortilla.Fold over both sides of the each tortilla and place seam sides down in the casserole dish. Spoon remaining sauce over enchiladas.
