Traditional Pork and Beef meatballs. Can be used for spaghetti and red sauce or just on their own. You can be creative and use ground turkey or chicken and of course only use egg whites. Combine well to mix meat. This is import in this recipe to incorporate after you add each ingredient so it is equally distributed. Saute onions and garlic (can add oil, I don't). Once they are cooled, add to meat along with Parsley. Mix well. In a separate dish crack eggs and slightly scramble with water and remaining salt; add to mixture and mix. Once the mixture is a bit "soupy" add Parmesan cheese and bread crumbs. Mix well and note that the final mixture will be a loose binding. This makes a moist meatball. I use an ice cream scoop to evenly portion each and roll into a ball. I place them on an ungreased broiler pan (to drain excess fat) and bake at 350 for approximately 20 minutes. Test for doneness by breaking open a meatball and looking for pinkness. If serving with red sauce, I place the desired number of meatballs in a baking dish and cover with red sauce and bake an additional 10 minutes before serving.
