egg sub, quarter cup
parm cheese, 1 tablespoon/hefty sprinkle
Italian seasoning to taste, pepper to taste (I did not need salt)
garlic to taste-powder or sauteed (just not raw)

Here is how you make Italian Ricotta Custard Cups:

spray 4 cups of a muffin tin with cooking spraycut slices of deli meat in half the wide way so you have 2 square-ish pieces. place the 2 pieces carefully into 1 muffin cup, overlapping on the bottom to form a seamless cup, but not overhanging the top of the muffin cup onto the tin edge or the meat will burn. Mix ricotta, egg sub, parm, seasonings in a bowl. Spoon a quarter of mixture into each meat cup. Each cup should be a little more than half full. It will expand when cooking. Top each cup with a very thin slice of peppered cheddar or cheese of choice. Bake at 350 for about 20 min, check at 15 min. You want the top of the filling to be browning and the custardy middle to not jiggle around too much when you shimmy the pan. While cups are baking, heat your beef broth. Serve 2 on a plate with a small bowl of broth for dipping and mustard or other low cal sauce of choice.
