Here is how you make Gyoza (Japanese potstickers):

Mince everything as small as possible (smaller the better). A food processor works fairly well. Mix all ingredients (except the wrappers). Wrap about a teaspoon of the meat mix in the wrappers so they look like potsticers.Lightly fry the potstickers in olive oil on a large hot frying pan or griddle. Pour enough water in to reach a depth of about 1/2 - 1 inch. Cover.
