One package of lite kielbasa. It has all the same great flavor and 1/2 the fat.
About 3-4 small red potatoes. Cleaned and sliced 1/8 inch. Leave the skin on for nutritional value.
Broccoli, washed and chopped. I often use frozen, and then I just add it in as is towards the end.
Variations: sauerkraut, spinach, kale leaves, and artichokes.All these can be added towards the end when you cover the entire dish. Bell peppers can be added, but add them in with the meat to get fully cooked.

Here is how you make Jess' Kielbasa creation:

Start with the potatoes, clean, slice 1/8" and then in half so you have half moons and put into a large Skillet with at least 2" sides. Once the potatoes are in there, cover with just enough water and bring to a boil. Let it boil for only a few minutes, you don't want them completely cooked. While you are waiting for the potatoes, slice your kielbasa in about 1/4" slices. When the potatoes are still little raw, fork goes through but doesn't come off again, strain and set aside in a bowl. Return the pan to the burner now set to med-hi heat. You can add a little olive oil or cooking spray to ensure the meat to not stick. Throw in the meat to give a nice browned crispiness. Stir occasionally. When the meat is looking good, throw in the potatoes and broccoli and add some pepper to your liking. Cover; allow the potatoes and broccoli to cook.
