The ingredients for Lotsa Lasagna are:

1 lb. lean ground beef
1 13.25 oz. package whole wheat blend lasagna noodles
1 pint (8 oz.) white or baby bella mushrooms, sliced
3 tbsp. dry sherry
1 cup Muir Glen Organic Portobello Mushroom pasta sauce
8 oz. frozen organic cut leaf spinach
16 oz. tub part-skim ricotta cheese
2 or 3 garlic cloves or 1/2 tsp granulated garlic
2 tbsp. organic lemon juice
8 oz. pkg. shredded reduced fat part-skim mozzarella cheese
1/3 cup grated parmesan cheese


How Do I Make Lotsa Lasagna?

Here is how you make Lotsa Lasagna:

Boil water and cook lasagna noodles according to package directions. Preheat oven to 400� F.Meanwhile, brown the ground beef in a heavy skillet and drain off any fat. reserving 1 tbsp. Transfer ground beef to a bowl. Add reserved fat to the skillet, and brown the mushrooms until just soft. Add the dry sherry, scraping up any browned bits from the pan as well. When the mushrooms are done, return the ground beef to the pan and add the pasta sauce. Heat through and season to taste [ I used oregano and an italian herb blend].Ricotta Cheese mixture: Cook the frozen spinach until warm. Combine ricotta cheese, spinach and garlic (squeezed through a press or chopped fine). Add lemon juice and blend well.Spray bottom and sides of a deep 13-inch by 9-inch baking dish with olive oil, and place one layer of the cooked noodles on the bottom. Top with a layer of ground beef/ tomato sauce and add another layer of noodles on top [I had more than enough noodles so I overlapped them, using about 5 noodles per layer]. On this layer spread out the ricotta cheese mixture, and top this another layer of noodles. Spread 1/2 of the tomato sauce on this layer. Top with another layer of noodles and the rest of the sauce. Your last layer is the shredded mozzarella and parmesan cheese. Bake for 30 minutes, or until cheese is melted and sauce is bubbly. Remove from oven and let rest for 5 - 10 minutes before cutting. Makes 12 3 inch x 3 inch x 3 inch servings.Number of Servings: 12
