Prepare lasagna noodles according to directions on package. For a 13" x 9" lasagna dish, you will need 9 full noodles.2. Brown 1-1/2 lbs. extra lean ground beef, drain, return to skillet.3. Before adding sauce to meat, spoon a little bit into bottom of lasagna dish to lightly cover the bottom so that lowest layer of noodles will not stick. Add remainder to browned ground beef and mix. Add seasonings if you are so inclined (garlic, onion, basil, oregano).4. Place 3 overlapping noodles over thin layer of sauce in bottom of 13"x9" lasagne dish.5. Scoop 1/2 of meat sauce onto noodles for bottom layer. Cover with approximately 3-4 oz. part-skim mozzarella cheese.6. Cover this layer with 3 more overlapping lasagna noodles.7. Spread a thin layer of part-skim Ricotta cheese over noodles for middle layer - use ~8 oz. to completely cover 13"x9" dish.8. Cover the Ricotta cheese layer with the final 3 overlapping lasagna noodles.9. Spread the remaining meat sauce on top, cover with remaining (~8 oz.) part-skim mozzarella cheese, and then garnish with Italian seasonings (oregano, basil, garlic) if desired.10. Bake at 350 degrees 30-40 minutes. Check after 20 minutes or so - if top cheese is browning too fast, cover with tin foil and continue cooking.11. Let stand 5-10 minutes before cutting and serving.12. Makes 8 good-sized portions.NOTE: Lasagne can be covered and frozen after step #9.
