1 jar low-sugar pasta sauce
1 package mozzarella
1 package ricotta
2 large eggs

Here is how you make Low carb lasagna:

Slice eggplant lengthwise into 1/4" slices. Salt liberally and leave to drain bitter juices for at least 15 minutes (up to an hour). Drain spinach. Preheat broiler on high. Brown beef (as well as any extra veggies you'd like to add, such as onion, mushroom, etc.) Add sauce to pan and simmer until thickened (you do NOT want watery sauce!) In a large bowl mix ricotta, spinach, and 2 eggs. Rinse eggplant and arrange in single layer on cookie sheets, broil for 3 minutes on each side. (If your oven isn't huge, you may have to do this more than once to broil them all. Use a timer, they will cook fast) Once all the eggplant has been broiled, arrange half in the bottom of a square cake pan, overlapping. Spread half the ricotta/spinach over it, then half the meat sauce, then half the mozzarella, Repeat.
