Delicious beef, pasta sheets, rich creamy sauce... A great traditional lasagne will always be a bit of an indulgence, but I've reduced the calories in mine by using lean beef, using double-concentrated tomato puree and a beef stock cube for a rich flavour, and using sauce flour for a butter-free white sauce. The portions are generous ; )I love a cheesy sauce on top of my lasagne, but if you wanted to skip the cheese you could knock a further 80 calories off each portion.

What Are The Ingredients For Nome's Lasagne Recipe?

The ingredients for Nome's Lasagne are:

1 tsp olive oil
1 chopped onion (about 120g)
250g lean beef mince
1 can chopped tomatoes
100g tomato puree
half a beef stock cube
black pepper
dried basil
dried oregano

210g lasagne verdi (10-12 sheets)

25g sauce flour
300ml semi-skimmed milk
mustard powder
white pepper
80g strong/medium cheddar


How Do I Make Nome's Lasagne?

Here is how you make Nome's Lasagne:

Preheat oven to 180 degrees celsius.Fry onion in oil until translucent.Add beef mince and cook, breaking up well, until just brown.Add tinned tomatoes, half stock cube, pepper and herbs.Simmer for a few minutes until the stock cube has dissolved, then add the tomato puree and mix well.Continue to simmer on a low heat.Meanwhile, combine 25g sauce flour and 300ml milk, with a whisk, and simmer for a few minutes. Add a dash of white pepper and 1/2 a teaspoon mustard powder (or a little mustard).Remove from the heat.Add the cheese, grated or thinly sliced. Stir until melted.Get your lasagne dish ready - you want something around 8 or 9 inches square.The meat mixture should be quite wet - if it has reduced add a little water and stir in.Spoon approx a fifth of the meat mixture into the dish and spread evenly on the bottom.Lay two lasagne sheets on top. (You will have two extra sheets to snap into strips and fill in any gaps!)Spoon another fifth of the meat on, followed by another two lasagne sheets. Press down gently after each lasagne layer.Build another two layers like this.On top of the fourth layer, spoon the last of the meat AND a spoonful of the cheese sauce, and mix them together a bit with a fork. Lay the last two lasagne sheets on and press down. If the sauce doesn't bubble up round the edges it may not be wet enough - rinse the pan out with a few tablespoons of water and add this too.Top with the rest of the cheese sauce.Bake in the oven for 35 minutes.Serve with a side salad or steamed cauliflower.
