Take pan off heat and let cool to room temp. Put meat, egg, salt, nutmeg, parsley, onion, cheese, olive oil into a bowl and mix. Then mix in the bread/milk mush. Put breadcrumbs on a plate. Pick a large fry or sautee pan and coat the bottom with olive oil, turn on medium high. Roll meat mixture into 1 inch thick meatballs, roll in breadcrumbs and put them in the pan. Brown on all sides and remove and drain on paper towels.
