1/2 of a large red bell pepper, diced fine
2 cloves of garlic, minced
2 tsp cumin
1 tsp coriander
1 tsp chili powder
salt and pepper
1 egg, beaten
1/3 cup panko crumbs (Japanese bread crumbs) - or less, just enough to help it all hold together.

Optional glaze:
1/4 cup ketchup or chili sauce
1 tbs honey
1/2 tbs cumin

Here is how you make Southwest Style Meat Loaf:

Preheat oven to 350.Line a loaf pan with wax paper. Mix the meat loaf ingredients together gently. Add only enough panko crumbs to keep it from falling apart.Scoop the meat mixture into the lined loaf pan, patting it down to fill the corners, and leveling off the top. Turn it out onto a broiler pan (lined with foil for easy cleanup), removing the wax paper.Bake for 15 minutes while you prepare the (optional) glaze by mixing those three ingredients together. After 15 minutes, spoon the glaze over the loaf, letting it dribble down the sides too. (Remember, your broiler pan is lined with foil... go nuts!)
