1 3/4 pounds lean ground beef (also good with ground turkey)
1/2 c dry bread crumbs
1/2 c honey-teriyaki BBQ sauce or BBQ sauce of choice
1 egg, beaten
1/4 tsp pepper
1/2 c honey-teriyaki BBQ sauce or BBQ sauce of choice
6 fresh mushrooms, sliced

Here is how you make Teriyaki Miniature Meat Loaves:

Spray twelve 2 1/2-inch muffin cups with nonstick cooking spray. Combine the ground beef, bread crumbs, 1/2 c bbq sauce, egg and pepper in a bowl and mix just until combined. Spoon the ground beef mixture into the prepared muffin cups and press lightly.Combine 1/2 c bbq sauce and mushrooms in a bowl and mix well. Spoon over the tops of the meat loaves. Bake at 400 degrees for 20 to 25 minutes or until the meat mixture registers 160 degrees in the center.Yield: 12 Meat Loaves. Note: May want to put a baking sheet under the pan for drippings as the ground beef grease tends to overflow the cups. This didn't happen with the ground turkey.Note2: The teriyaki bbq sauce can be a bit overpowering. Can use other bbq sauces and it tastes just as well.
