8 oz crimini mushrooms, sliced
3 cloves garlic, minced and divided
2 medium zucchini, chopped
2 tbsp white wine
1/4 tsp salt

6 oz can tomato paste
1 jar low sodium tomato marinara
16 oz lean ground beef
1 large egg
1 tsp garlic, minced


How Do I Make Punched Up Marinara with Meatballs?

Here is how you make Punched Up Marinara with Meatballs:

Heat oil in a large sauce pan over medium heat. Add onion and saute until tender, about 5 minutes. Add mushrooms, and saute until tender and beginning to brown, about 5 minutes. Add salt, zucchini and 2 teaspoons of garlic, stirring occasionally; cook 3 minutes. Season to taste with dried herbs: rosemary, basil, thyme, oregano. Add wine and cook, stirring, until wine is nearly cooked off. Add tomato paste and marinara sauce; cover and bring to a simmer.Meanwhile, in a medium bowl, beat the egg lightly, then add the ground beef and remaining garlic, and any herbs you desire. Using a tablespoon, roll up meatballs and drop individually into the simmering sauce. Cook, stirring gently, until meatballs are cooked through; about 15 minutes.Makes 8 generous servings.
