Add onion and saute until tender, about 5 minutes. Add mushrooms, and saute until tender and beginning to brown, about 5 minutes. Add salt, zucchini and 2 teaspoons of garlic, stirring occasionally; cook 3 minutes. Season to taste with dried herbs: rosemary, basil, thyme, oregano. Add wine and cook, stirring, until wine is nearly cooked off. Add tomato paste and marinara sauce; cover and bring to a simmer.Meanwhile, in a medium bowl, beat the egg lightly, then add the ground beef and remaining garlic, and any herbs you desire.
