1 onion, cut into large pieces
2 stalks celery, diced
1 yellow pepper, cut into large pieces
2 cloves garlic, minced
1/4 t cayenne pepper
1/4 c apricot jam
1/2 cup pineapple chunks (fresh or canned)
1/8 cup water or juice form pineapple chunks
1 t cornstarch
2 T fresh parsley, chopped

Here is how you make Apricot Pineapple Meatballs:

Preheat oven to 400 F. Spray a baking sheet with nonstick spray.Rip bread into hunks and put in food processor. Add parsley and make into crumbs. Using a fork, mix crumbs with egg whites and milk in a bowl. Add all spices and beef and mix until combined.Measure by the tablespoonful and form into balls. Place on baking sheet. Bake 7-10 minutes, until no longer pink inside.Heat oil in large saucepan over medium-low heat. Saute onion, celery, pepper, garlic, and cayenne, stirring occasionally, for 3 minutes.Stir in apricot jam, pineapple, and water. Bring to a boil. Reduce heat, cover, and simmer 10 minutes, until slightly thickened. Add meatballs and stir gently to coat with sauce.In a small bowl, mix 1 T water with cornstarch. Stir into sauce and continue to simmer, covered, another 5 minutes until sauce is thick.
