How Do I Make Tillander* Swedish Meatballs?

Here is how you make Tillander* Swedish Meatballs:

In a large bowl, combine ground beef, bread crumbs, sherry, mace and pepper with 1 1/2 cup of the cream.Form into about 40 meatballs and, on waxed paper, roll in flour to coat evenly. In a large, cast iron skillet (very large, or you will need to split recipe into two batches), bring oil to medium-high heat.In hot oil, brown meatballs well, turning frequently to brown evenly. Don't be afraid to let them get fairly dark to make sure they are cooked through, the next step will break down the black/brown crustiness.Remove from oil and let stand on paper towels to drain off oil. Wipe the skillet clean. In the same skillet, over medium heat, melt the butter. Stir in two tablespoons of flour until blended well.Gradually stir in undiluted consomm? and remaining one cup of the cream. Bring to boil, stirring constantly.Add meatballs and simmer, covered, for 15 minutes. Discard bay leaf and serve hot (we often transfer them to a crock pot, which works well.)Serving Size: Makes roughly 8 servings of 5 medium sized meatballs.Number of Servings: 8Recipe submitted by SparkPeople user BLAINETILLANDER.
