Ground onions & bread, mix all ingredients together very well. For BEST results, use a food processor - start with the onions, then add the beef & bread & eggs. Mix on High, stopping occasionally to make sure the top ingredients are pressed down. If you don't have a food processor, ask your butcher to "double grind" the meat, and make sure you work it very well with your fork (or hands). Once the mixture is almost like a paté, shape into little patties which are about 1/2 the size of a regular hamburger. Keep your hands wet so that it doesn't stick to your hands.If your family has different tastes for Cayenne Pepper, you can do what I do - prepare half the koftes with a small amount of Cayenne, then I add more and mix it for DH....(Makes about 18-20 small patties. Patties weigh about 40g or less than 2 oz when cooked). Grill on BBQ or indoor grill.
