I found this recipe on the side of the box of Cream of Wheat and thought it sounded interesting, as it uses the cereal in place of breadcrumbs. I added one shredded fresh carrot to the mix and a bit of honey to the topping, which adds slightly to the calories.

How Do I Make Simple Meatloaf?

Here is how you make Simple Meatloaf:

Heat the oven to 350 degrees. Saute the onion gently in a drop of canola oil and add one shredded carrot (if desired) until just cooked. Cool slightly, and mix all the remaining ingredients together, except the 1/4 of ketchup which has been held aside. Pat into a small casserole and then pour the remaining ketchup on top. I like to add about a tablespoon of honey to the ketchup and then spread it on the top of the meatloaf. Bake for about 40-45 minutes and enjoy!
