Preheat the oven to 350?F degrees. Heat olive oil in large skillet. Cook onions and peppers until translucent about 5 minutes and then add garlic cook for one minute. Then add salt, pepper, oregano, parsley and basil; stir and cool. Mix meat, vegetable mixture, egg and bread crumbs. Shape to a loaf shape. Then mix ketchup and dried mustard, spread on top of meatloaf and bake for 45-60 minutes or until fluids run clear.
