1c. Italian bread crumbs
1 T. fresh parsley, minced
1 tsp. salt (optional)
1 tsp. ground black pepper
2 eggs, beaten
1/2 c. low fat/sodium chicken broth
1/2 c. romano cheese, grated
8 oz. part skim cottage cheese
1 c. shredded part skim mozzarella cheese
2 T. shredded part skim mozzarella cheese (optional)

Here is how you make Meatloaf with a Twist:

1. Preheat oven to 350. Grease 9x9 baking dish.2. Place potatoes in large pot, bring to a boil, reduce to medium low, cover and cook 20 minutes or until tender. Drain and allow to steam dry for a minute or two. Mash the potatoes with a masher and set aside.3. Heat olive oil over medium heat. Cook and stir onion and garlic until translucent, about 5 minutes. Set aside.4.In large bowl, mix ground beef, bread crumbs, parsley, salt, black pepper, onion and garlic mixture, eggs, chicken broth and Romano cheese until thoroughly combined. In a second bowl, mix the mashed potatoes and cottage cheese.5. Spoon 1/2 of meat mix into the prepared dish. Spread the potatoes over the top leaving a 1/2 inch border around the edge of the meat; sprinkle 1 cup mozzarella cheese over potatoes. Cover the cheese with the remaining meat mixture in an even layer; press the edges down to seal in the mashed potatoes. Sprinkle loaf with additional 2 T. mozzarella cheese, if desired.6. Bake in oven about 1 hour. Thermometer should read at least 160 degrees. Let stand for 10 minutes before serving.
