My mom's "meatloaf" is encased in mashed potatoes, and constitutes a meal in itself. It used to me made with left-over meats from "Cozido a Portuguesa" but I use whatever I have in the fridge at the time. Set aside.In a skillet, brown a small onion and add shreaded left-over meats. In this case I used a mix of pork loin and grilled chicken. Add 1 can of stewed tomatoes, salsa, wine, and spices to taste. Cook on medium heat until the juices have evaporated.Spray a 12x8 pyrex with Pam. Lay 1/2 of the mashed potatoes on even layer, spead the meat mixture, and cover with the remaining mashed potatoes. This can be done ahead of time.Before serving, cover with the egg beater, and pepper to taste and put under the broiler for a few minutes, just until the top is golden brown.
