Preheat the oven to 350Heat a Tbls or so of butter in a medium skillet and saut? the onions until slightly translucent and add mushrooms until softened, 2 minutes more. Set aside and let cool.In a bowl, mix together the meats, all of the herbs, the egg, the garlic, the salt and pepper and the mushrooms/onions.If needed, adjust seasonings.Line a baking sheet with parchment paper. Form the meat mixture into a loaf. Place into preheated oven.Mix together the ketchup, honey, hot sauce and Worcestershire to taste.After 15 minutes, take out the loaf and spread the glaze over all exposed sides.
