Preheat oven to 350Put olive oil in skillet and heat on medium. Add chopped onion. When onion is almost tender, add minced garlic and saute until tender. Cool onion and garlic. Mix beef, egg whites, oats, onion, garlic, salt and pepper together. Put in square 8x8 baking pan and make into loaf shape. Bake for 30 minutes and remove. Cover the top of th meatloaf with ketchup. Return to the oven for another 30-45 minutes, until done. When done, let set 5-10 minutes before cutting.
