1 large onion, divided
2 stalks celery, cut into 1 inch pieces
2 carrots, cut into 1 inch pieces
1 green pepper, divided

1 large egg
1/2 cup breadcrumbs
1/4 cup ketchup
1 tblsp Worcestershire sauce
pepper, garlic powder, thyme to taste

Here is how you make loaded meatloaf:

In food processor (can also use chopper), grind half the onion and each pepper with carrots and celery. chop rest of onion and peppers and set aside. add ground beef, egg, breadcrumbs, ketchup, and Worcestershire sauce to food processor and mix until all veggies are thoroughly blended with the meat and the egg is mixed in well. remove from processor and place in large bowl. mix in remaining onion and peppers; add seasonings and mix well ( I do this by hand). spray a 9x5-inch loaf pan with PAM and turn meat mixture into that, patting around edges to make it even. Bake at 350 degrees for 45 minutes; check middle to see if done. let rest in pan 10 minutes. turn out of pan onto plate and serve!Serving Size: makes 8 thick piecesNumber of Servings: 8Recipe submitted by SparkPeople user MARMAERT.
