Here is how you make Mediterranean Goulash:

***I am very new to cooking, so please reinvent as you like.I did not include any set amounts because I did not measure anything as I went. So there really is no RIGHT way, make it your way.In a pan with a higher rim, warm the sliced onion pieces and garlic for about 1-2minutes, add chicken broth (low sodium) and rice. Also add seasonings to your liking (I am still learning) but I added Cumin and Chili Powder. Once simmering, lower heat and cover, stir occasionally. (If rice is soaking broth too quickly add more broth. If it's not Low Sodium, considering diluting with water).In separate pan, brown meat (season as you like, again I added Cumin and so Crazy Janes).In the microwave, heat the black bean, peas, and carrot shreds (in one dish is fine). ( I only used about 1 c. beans, 1/3 c. peas, 1 large carrot)Once rice is tender, add meat, beans, peas, and carrots. Let simmer together for 2-5minutes.I sprinkled Parmesan on top for extra flavor, or you can use a tortilla for a different approach, both taste good.Serving Size: Makes about 6 3/4 cup servingsNumber of Servings: 6Recipe submitted by SparkPeople user DANISUE912.
