Here is how you make Mediterranean mince:

Wash and prepare all the veg, slicing the aubergine, peppers and onions and cutting the potatoes into equal sizes.While the potatoes are cooking saute the other veg in 1 tbsp of olive oil.Keep these to one side while you brown the mince,draining any fat off.Add the canned tomatoes (chopped) and it's juice and the tomatoe puree and spices.Cook for 10 minutes for the flavours to combine.Into an ovenproof dish lay half of the aubergine,peppers and onions and then half of the mince, repeat with the other half of them all.Strain and mash the potatoes with the butter and greek yoghurt.Put the mashed potatoe on top of the dish and pop in the oven to heat through.Serving Size: Makes four good servingsNumber of Servings: 4Recipe submitted by SparkPeople user SATSUMAS.
